Recipe Ingredients:

2 tbsp olive oil

2 cloves garlic, chopped

1 tsp fresh ginger, chopped

1 tbsp sambal olek (can substitute hot sauce, if desired)

2 tbsp brown sugar

½ cup crunchy peanut butter

1 cup coconut milk

2 tbsp soy sauce

2 tbsp lime juice

4 packages (about 22 oz total) Kombu noodles, thawed (seaweed noodles available at Whole Foods and other specialty stores. May be in the frozen or refrigerated section)

Preparation:

1. Heat a sauté pan over medium-high heat. Add olive oil, garlic, and ginger. Sweat garlic and ginger.

2. Add sambal and brown sugar. Incorporate ingredients in the pan and cook for 30 seconds.

3. Add peanut butter, coconut milk, soy sauce, and lime juice. Whisk to incorporate and cook for one minute.

4. Add Kombu noodles, stir, and cook 2 minutes.

5. Serve equal portions in four bowls. Mix it up; add a 1/2 cup of your favorite veggies to round things out.
