Make tonight’s pasta a little different by using spelt, an ancient grain, available in most supermarkets.

Recipe Ingredients:

8 oz spelt noodles

3 tbsp vegetable oil

1 medium onion, large dice

12 oz extra-lean (5% fat) ham, diced

½ tsp caraway seeds

½ tsp cumin seeds

2 cups cabbage, shredded

2 Granny Smith apples, cored and diced

1 cup chicken stock

1 tbsp white wine vinegar

2 tsp whole-grain mustard

1 tbsp cornstarch

Salt and pepper

Preparation:

1. In a large saucepan (4-quart pot), bring water to a boil and prepare noodles per the manufacturer’s directions. Drain and set aside.

2. While the pasta is cooking, heat a large sauté pan on medium-heat, add oil, and then add onion and ham.

3. Cook approximately 4 minutes until the ham is lightly browned.

4. Add seeds and cook 1 minute longer.

5. Add the apples, cabbage, and chicken stock. Bring to a boil and then simmer for 4 minutes. The cabbage should be tender but firm.

6. In a bowl, combine vinegar, mustard, and cornstarch. Add mixture to the pan and cook for 1 minute, until the liquid thickens.

7. Incorporate the ham, apples, cabbage, and sauce into the bowl containing the noodles. Toss to distribute evenly and adjust seasoning with salt and pepper to taste. Serve equal portions in four bowls.
