With more wintry weather in the forecast next week, some comfort food sounds like just the ticket. Our version of meatloaf is easy to make and, along with the mashed potatoes, a comfort food treat at any time of year.

Recipe Ingredients:

1 ¼ lbs 95% lean ground beef, uncooked (preferably grass-fed)

¼ cup dry, grated, seasoned breadcrumbs

1 tbsp ketchup

2 tbsp grated Parmesan cheese

2 tbsp egg substitute

¾ cup chopped onion

6 garlic cloves, sliced

5 cups instant mashed potatoes (Note: Need small amount milk and butter to prepare)

8 cups spinach

Salt and pepper to taste

Preparation:

1. Preheat oven to 425 degrees F.

2. Combine first six ingredients in large mixing bowl. Transfer to loaf pan and cook for 25 to 30 minutes.

3. While meatloaf is cooking, coat a nonstick skillet with cooking spray and add garlic. Sauté for 5 to 7 minutes, mixing occasionally.

4. While garlic is cooking, prepare mashed potatoes according to directions (you can substitute skim or low-fat milk for whole milk, if desired).

5. Once potatoes are prepared, cover and remove from heat.

6. Once garlic is golden-brown in color, add spinach to skillet. Sauté with garlic until spinach is fully cooked.

7. Add garlic-spinach mixture to mashed potatoes, mixing thoroughly.

8. Remove meatloaf from oven when center is no longer pink.

9. Cut loaf into four equal pieces and arrange each on plate.

10. Add ¼ of garlic-spinach mashed potatoes to each and serve.
