Recipe Ingredients:
4, 4-oz boneless, skinless chicken breasts, uncooked
4 oz cream cheese, softened
4 oz mango preserves
1 cup flour
1 cup egg substitute, in wide bowl
½ cup almond meal
Salt and pepper
Preparation:
1. Mix cream cheese and mango together in a small bowl.
2. Cut slit in each chicken breast, creating a large pocket inside. With a small spoon, place mango-cheese filling into each chicken breast.
3. Add salt and pepper to almond meal on a plate or in a wide bowl. Pour flour onto a second plate or into a wide bowl.
4. Coat chicken with flour, then egg wash, and finally almond meal.
5. Heat a large skillet on medium-high. Coat with nonstick spray.
6. Cook chicken for approximately 8 to 10 minutes on each side or until cooked through.
