Try something different for tonight’s dinner by cooking up these low-calorie Japanese seaweed noodles. Sambal olek is a chili-based hot sauce you can add at your discretion!

Recipe Ingredients:
2 tbsp olive oil
2 cloves garlic, chopped
1 tsp fresh ginger, chopped
1 tbsp sambal olek (you can substitute another hot sauce, if desired)
2 tbsp brown sugar
½ cup crunchy peanut butter
1 cup coconut milk
2 tbsp soy sauce
2 tbsp lime juice
4 packages (about 22 oz total) Kombu noodles, thawed (seaweed noodles available at Whole Foods and other specialty stores. May be in the frozen or refrigerated section.)
Preparation:
- Heat a sauté pan to medium-high heat. Add olive oil, garlic, and ginger. Sweat garlic and ginger.
- Add sambal and brown sugar. Incorporate ingredients in the pan and cook for 30 seconds.
- Add peanut butter, coconut milk, soy sauce, and lime juice. Whisk to incorporate and cook for one minute.
- Add Kombu noodles, stir, and cook 2 minutes.Serve equal portions in four bowls. Change it up: you can add a little more protein with tofu or baked chicken to change it up.
