Broccoli rabe is a great source of calcium, vitamin C, and potassium – plus it’s delicious when flavored with garlic and served with these juicy pork chops!

Recipe Ingredients:
4 pork chops (all visible fat trimmed, roughly 10 oz each), bone-in
4 bunches broccoli rabe
4 cloves garlic, minced
1 tbsp olive oil
Salt and pepper
Red pepper flakes (optional)
Preparation:
1. Season pork chops with salt and pepper and grill on high heat, about 5 minutes per side. (You can also do this indoors, either in a pan on the stove top or under the broiler, but there will be smoke!)
2. In a saucepan, bring 3 quarts of salted water to a boil.
3. Prepare broccoli rabe by removing any tough exterior leaves (this is optional) and trimming thick stalk bottoms.
4. When water comes to a boil, put broccoli rabe into water and blanch (1 to 2 minutes).
5. Remove from heat and cut broccoli into shorter segments.
6. In a sauté pan on medium heat, add olive oil and garlic. Cook garlic until just golden brown and add broccoli. Season with salt and pepper and sauté for 2 to 3 minutes. Lower heat if necessary so that garlic doesn’t burn.
7. To serve, place a pork chop and serving of broccoli rabe on plate. For a little spice, add a pinch of red pepper flakes to the broccoli.
