Recipe Ingredients:

1 ½ lbs mahi mahi, filleted and skinless

3/4 cup teriyaki sauce

8 oz shiitake mushrooms, stems removed and caps sliced

4 tbsp vegetable oil

Salt and pepper

Preparation:

1. Cut fish into three equal pieces and marinate in ¼ cup teriyaki sauce for 20 minutes prior to cooking.

2. Grill fish for 4 to 5 minutes per side. While fish is grilling, brush with the remaining teriyaki sauce to coat both sides.

3. Prepare mushrooms and bok choy. In a sauté pan on high heat, add vegetable oil.

4. When hot, add mushrooms and season with salt and pepper. Cook for about 5 minutes.

5. Add bok choy, season with salt and pepper, and cook for 1 to 2 minutes longer, tossing frequently. Bok choy should retain its green color and be warm but crisp.
