A variation on the French croque-monsieur, this tasty and easy sandwich is sure to satisfy your craving for a little sweet and a little savory.

Recipe Ingredients:

1 cup egg substitute

½ cup skim milk

1 tbsp sugar

1 tbsp cinnamon

8 slices challah bread (or other egg bread, each slice about 1½ ounces)

4 slices low-fat Swiss cheese

½ lb sliced ham, extra-lean (about 5 percent fat)

¼ cup maple syrup

Nonstick spray

6 cups spinach, raw, torn into bite-size pieces

1 oz (about 3 tbsp) sweetened, dried cranberries

¼ cup low-fat balsamic vinaigrette salad dressing

Preparation:

1. Coat skillet or pan with nonstick spray (about one-second spray) and heat to medium-high.

2. Combine egg substitute, milk, sugar, and cinnamon in a wide bowl. Whisk or beat approximately 10 seconds.

3. Submerge bread into egg mixture, flipping if necessary.

4. Place as many slices of battered bread as will fit into pan and cook until they start to brown,  approximately 2 minutes on each side.

5. Set bread (now French toast) aside.

6. Place ham into pan and warm approximately 20 seconds on each side.

7. Combine ham and cheese between two slices of bread. Place sandwich back into pan and cook approximately 30 seconds on each side. Serve with 1 tbsp syrup.

8. Mix spinach in large bowl with cranberries and dressing, tossing to coat. Divide equally into four bowls and serve with Monte Cristo.
