A marinated seafood dish popular in South America, ceviche is surprisingly easy to make at home. This makes for a great make-ahead meal for a weeknight or something different for a weekend dinner!

Recipe Ingredients:

1 lb red snapper, skin-off filet

3 lemons, juiced, seeds removed

3 limes, juiced

1 medium red onion, thinly sliced

Salt and pepper to taste

1 serrano or jalapeno pepper, small dice

1 clove garlic, minced

4 tbsp fresh cilantro, chopped

4 oz plantain chips

Preparation:

1. Cut fish into pieces (1/2-inch or so cubes) and place in a lidded container.

2. Place red onion on top of fish. Add remaining ingredients, covering with juices.

3. Place in refrigerator for at least 4 hours before serving.

4. Toss all ingredients right before serving.

5. Serve on a platter with a side of plantain chips or give it a twist and make lettuce wraps!
