Recipe Ingredients:

¼ medium sized red onion

½ medium sized zucchini

3 tbsp extra virgin olive oil

1 egg

1 lb lean ground turkey

Salt and pepper, to taste

Nonstick spray

4 oz part-skim mozzarella cheese

4 large whole-grain hamburger rolls

1 medium tomato, thinly sliced

4 large leaves butterhead lettuce

Preparation:

1. Peel and dice onion. Set aside. Dice zucchini and set aside.

2. Heat a sauté pan on medium heat. Add olive oil.

3. Add onion and cook until translucent.

4. Then add zucchini and cook until slightly soft. Season with salt and pepper. Set aside to cool.

5. Beat the egg and mix with ground turkey. Add cooled onion and zucchini.

6. Form four burger patties.

7. Heat a sauté pan to a medium-high heat, add vegetable oil, and when pan is sufficiently hot, add burgers.

8. Cook 4 minutes on each side or until cooked through. (Burgers can also be grilled or baked.)

9. Place one slice mozzarella on each burger and heat until melted.

10. Place burger on bun and garnish with lettuce and tomato slices.
